Cómo Hacer Mojito, Margarita Y Bloody Mary

This Pineapple Coconut Mojito is the classic mint mojito recipe remixed with another tropical drink favorite, the piña colada! This simple mojito recipe is a delicious summer cocktail!
I am so very excited to be sharing this new drink with y’all. It’s my new favorite cocktail by far and I have been enjoying it immensely.
My favorite cocktails are almost always rum based cocktails. Most people seem to go for a margarita or a vodka something or another.

While I enjoy a good margarita from time to time (on the rocks with salt please!), I am loyal to rum 99% of the time.
And a good fruit based Mojito is almost impossible for me to pass up. I love the combination of fruit and mint together with a hearty splash of rum!
I was looking for a jar of pineapple juice last week (to make my favorite Boozy Piña Colada No Bake Pie) and I came across a jar of pineapple coconut juice.

It was on sale, so I went ahead and picked it up. I figured the girls might enjoy it and maybe I could use it in my piña colada pie.
I loved it so much, I decided to use it to combine my two favorite cocktails, a piña colada and a mojito, into one grand cocktail.
I know it sounds crazy, but it is SO dang good! I made it last week again for some neighbors and they LOVED it.

It is the perfect Summer cocktail to enjoy as you sit on the porch watching your kids run wild…while pretending they belong to the neighbor. ;-)

I'm a trial & error, self taught, sugar addict who thankfully learned how to survive in the kitchen! I am also a wife, mama of 3.This Pineapple Mojito is the perfect piña colada twist on one of our favorite cocktails. A few extra simple ingredients kicks this mojito up a notch and will make it your favorite too!
Mojito & Pina Colada
This amazing drink is a tropical twist on one of my favorites, the classic mojito. The flavors of mint and lime combine perfectly with the flavors of a pina colada, bringing this amazing drink to life.
The classic mojito is a muddling of mint leaves, lime juice and simple syrup. You then top it with rum, and club soda. It is a delicious and refreshing cocktail that I have spent many an hour getting to know better.
This recipe could also be called a piña colada mojito because like the piña colada we are using the flavors of pineapple, coconut, and rum to make a refreshing and delicious drink.

In the bottom of your high ball glass muddle together mint leaves, simple syrup, lime juice and pineapple juice. If you have never muddled, fear not! After you make one of these you will want to buy a muddler. Until then, use the bottom of an ice-cream scoop. Just gently rub the mint leaves into the other ingredients. They will release their juice adding the best taste to this drink.
Add in the coconut rum. If you don’t have any coconut rum on hand, use regular and just enjoy the pineapple taste of this drink. My favorite non flavored rum is Bacardi. It works great in this mojito recipe.
Top with club soda. If you want to kick the coconut flavor up a notch you can use coconut sparkling water like I did in my Pina Colada Vodka Soda.
Creamy Coconut Mojito
I have my own recipe for how to make simple syrup. It is just as the name implies: simple. I think it is totally worth making at home and keeping a batch in the refrigerator. If you don’t, just pick some up at the store when you buy your rum and mint leaves! They sell it with the alcohol.
Do you like how you can even see the muddling marks on the mint leaves? They were so fresh and perfect in this cocktail.
It's like a Pina Colada and a Mojito had a fantastic baby with this amazing Pineapple Mojito! This recipe comes together so fast and is the amazing tropical cocktail you are looking for!
